Walls do not breathe. I find the last sentence completely unrealistic, as never enough moisture will diffuse from the inside to the outside to become condensate there.A small part can be absorbed by the plaster and transferred to the underlying rear masonry. Through the ventilation gap, the resulting condensate can then drain off.
Has such mold already been proven in the wild? An internet source is sufficient, links if necessary by PM (the forum requires it that way) ;-).The mortar required for fixing is applied only in strips on the sides and in the middle. Condensate would form behind this and lead to very pronounced mold growth over time.
