As non-locals, we “had to“ ask two neighbors for their signatures on our construction project at that time. Both signed without hesitation. I was very impressed by the calmness and friendliness of the people back then. That is still the case today..

Rather only whether you declare any own readiness or waivers. I can't find it right now, but we already had such a thread this winter where someone was anxious that the ability to approve the neighboring building plans might exceed their capabilities as a layperson in construction. I assume that it will NOT say there "hereby launy10 and the devil agree on the sale & leaseback of a soul" ;-)

Ditto! Nothing beats nice neighbors... and we have six of them :)

For us, it was only one neighbor, but she immediately gave us a key so we could use her restroom instead of the construction site porta-potty. And later we were allowed to use her basement as a buffer storage for moving boxes.

The neighbor to the west didn’t have to sign anything but provided construction water instead. To the north, a fence was dismantled (without our involvement) to put up the crane. After completion of the construction work, this fence was moved 1.5 meters so "they have more space for their access path." The south side always kindly supplied us with coffee, cake, or beer. And the southwest side was used for access for the earthworks so they wouldn’t get in the way of the northern construction site access. Boundary stones are not taken very seriously here either ("you’ll make it nice"), and fences don’t exist at all. But it was also the last gap in an existing developed area, so it’s not comparable.

I also have a question about this topic. If the property adjacent to the land to be developed belongs to me, will I myself be notified by the building authority about the upcoming construction, or will the neighbor two parcels away be notified? Another question regarding this: Does the neighbor on the other side of the street also count, or is the street considered a boundary/separate parcel here?

We have this situation with two adjacent properties we own and even had to grant ourselves an easement. Somehow logical because the authorities surely need to ensure that a de-facto easement (in our case, encroachment on setback distance) is documented in the land register if the affected parcel is ever to be sold.

If you also build on the second property, I can well imagine that the neighbor would be notified. Then they are no longer two parcels away but possibly directly affected.
