Be glad if you have good and better experience. We constantly have to protect our construction site from craftsmen who want to do nonsense. Therefore, please feel free to give professional advice but do not judge when we drive away craftsmen, because it is my million that is invested and lost if something goes wrong.

Apart from that, such a screed cannot withstand arbitrary surface pressures. A drywall partition brings a considerable amount of weight, which is concentrated on a relatively small area. I haven't seen any drywall partitions placed/screwed onto or on top of the screed here in the construction area. And you also ruin the sound insulation with that.

PS:
And how do you actually plaster drywall after the screed is installed? Almost impossible to do it properly...

Oh, now I understand you. I don’t have drywall walls in the sense of walls that, for example, separate something. For me, the drywall installer only covers the ceilings in the attic and hides the pipes in the bathrooms. If I had wanted to separate the WC from the sink with a wall, for example, it would have had to be done before the screed.

But we don’t have that at all. It’s about the cladding, so to speak.

I don't quite understand the problem. In our case, 1. parts of the screed were not covered with underfloor heating and 2. parts of the screed were completely left out in order to still be able to do such "messy things". And why would you plaster a drywall again?

Also annoying, because then the transition from plaster to drywall ceiling becomes trickier. Normally, you install the suspended drywall ceiling first, the plasterer plasters the wall and makes a scraping joint between plaster and ceiling. I would have done that alone so that the plasterers or other tradesmen don’t accidentally perforate the vapor barrier foil with their tools. With something like a butterfly knife, you can easily reach the ceiling, and if the ceiling isn’t there yet, the vapor barrier foil gets damaged... And on top of that, the wooden substructure definitely has to be installed beforehand, because it’s what holds the insulation and vapor barrier in place in the first place. And wood is even more prone to mold than gypsum boards?
