You can do that without any problems. I have been doing it for years. One should just draw water from the fridge very regularly so that it doesn't stand in the hose for too long.

you mean we should simply lay a surface-mounted pipe to the refrigerator and connect the water supply there?

@ k you also connected the feed hose with a length of 2-3m?

So you say it is not a problem? it is only a 1/4" hose anyway

.. in order to decide on questions like surface-mounted installations, you naturally need to know where a faucet for the refrigerator could be cleverly installed. For this, you need a kitchen plan ... and maybe also the knowledge of which side the water connection is on at the refrigerator.

EDIT:
And since it is a new building, I would plan this well and, if necessary, install a second water connection.

The fixed water connection is always on the back of the refrigerator.
Unless it is a built-in refrigerator, the dispensing point must be mounted either to the left or right of the refrigerator anyway (built-in depth is already oversized, meaning the refrigerator protrudes slightly).
My heating technician installed the connection directly behind the refrigerator, and now I run a hose from the angle valve. It’s about 5 meters – no problems.
However, I would regularly draw water for hygiene reasons.
We use the water dispenser several times daily and change the water filter twice a year.

Yes, I have my doubts about the hygiene with the 2.5m long hose.

A water connection right next to the fridge is not possible because of the cabinets
so only the water connection from the dishwasher remains and then 2.5m to the fridge.

or we take a fridge with a water tank

We don't need much water anyway, we would only use the water for ice cubes
