you can't go wrong with CAT7. The price difference between Cat5 and CAT7 has become quite small by now. A professional will always recommend CAT7, not because of the price.
Even though there are currently no CAT7 sockets available, a socket can be quickly replaced, whereas the cable cannot. Regarding TV via Internet, you are also on the safe side with this.
Telekom, for example, is currently preparing FTTH (Fiber-to-the-Home) for many areas in Germany, which means in the future you can have a fiber optic line laid all the way to your house by Telekom and thus have completely different bandwidth possibilities. Here, a Gigabit network via CAT7 is already practical.
Not everyone will need these bandwidths—especially in the private sector—but who really knows where things will go.
You can also run telephone without any problems over CAT7; just use the correct wires depending on whether you want ISDN or T-Net, done. For example, you could use a double socket for both PC and telephone.
Make sure to use good quality components (sockets + patch panel) and professional execution of the patch work—preferably with a test/measurement protocol by a professional—then everything should work and you will definitely be upgradeable for the future.
