Have them give you the construction service description (Bauleistungsbeschreibung) and check what is all a "builder’s task" or “to be done by the client.”
That can be earthworks (because only a little is included by the house builder), development, porta-potty, construction power for drying the screed, etc.
Besides that – this is actually not a MUST – there are special requests. It would be new to me if one could manage completely without them (the standard only installs what really has to be installed – e.g., only minimal electrical fittings with sockets/switches/light points. Or you want electric shutters after all. Or someone should paint the roof overhang). Which would still be possible.
Then there are legal requirements that must be met. In NRW, for example, it is mandatory to have a photovoltaic system. Your provider only offers the pre-installation. Sounds cool but will just be an empty conduit...
And to be able to live in the house, you’ll need a driveway, paving, terrace, garden, etc.

Yes, if the absolute minimum satisfies you, you can build cheaply. Still, it will be quite a bit over the €300k and then all the surroundings around the house.
And when it’s only little things like
that add up.
That is usually not enough, because too little:
Who lays the lines up to the street? Applies to electricity and water as well.
Who sands further, wallpapers and/or paints?
Ah, you have to paint yourself!
You have to do the dimpled membrane yourself or the landscaping builder.
That’s actually high-quality!

So really all floors, walls, ceilings except the bathrooms have to be done yourself.
