I will pick up the topic again. So far, we have been invoiced the following services from the notary:

Grundschuldbestellung: €1,140
Bauträgerkaufvertrag / Beurkundungsverfahren: €3,370

For a purchase price of approximately €550,000 (new build in Hessen), various online calculators indicate an amount of about €8,200. So far, we have paid €4,510. Will there be another invoice or is that all? The demand for payment of the real estate transfer tax (6% in Hessen) came today and matches the amount exactly as with the online calculators.

If I understand correctly, you have signed the contract and registered the mortgage so far. Accordingly, much more still needs to happen (in the land register), which in turn the notary will have to arrange and be paid for. This will only come in dribs and drabs.
