"Simply cutting out" is not an option there. It really takes practice to do it cleanly with a jigsaw, or you use a circular saw and clamp a guide. And the ventilation behind is then zero, it can and will start to mold back there.
"Double" that, you will ruin your nice cabinet in the end, which certainly wasn’t cheap. And cabinets don’t have the back panel set inward for no reason, it has a purpose.
