I am rather surprised by the very light first variant. I know beech with oil as rather dark. Even within the panels, you have different shades on the various lamellas. Depending on the composition of the panel, you get very different variants. You can of course hope to find wood by chance that does not react quite so darkly to the oil. It would probably be better to tint the oil a bit to get everything darker. Or you take an oil with light pigments.
If you prefer it lighter, use birch or maple for the floor. And go to a good wood dealer or carpenter who will cut your floors from a large panel. Ideally still with continuous lamellas. There you have better chances for uniform shades.
