Handleless versus handle: true, with handleless you can quickly wipe over it. Let costs/price decide: which is more expensive? I have no idea.
Worktop: if you use the sink as an undermount sink without its own draining area, you would be more flexible with the worktop. Also, I would prefer a smaller hob with flexible plates. I do have large pots, but I always cook with only 2-3 at the same time plus Thermomix. I think a normal one would be enough.
Would you change anything about the floor plan? A little is still possible. But not much [emoji23]
We have an undermount sink without a draining area in a granite worktop. The granite is Nero Assoluto, flamed and brushed. Because of the "wavy" surface, the granite does not feel cold at all; we would choose it again anytime. The surface is also very low-maintenance and does not need to be dried after wiping, as is the case with high-gloss granite.
A handleless kitchen is more expensive than one with handles (this was told to us by several kitchen dealers). We have stainless steel handle rails, which are very easy to wipe clean (no corners and edges).
