Is my cost estimate realistic?

If you then manage to get them installed. It’s sometimes like the mafia, there was a report about it recently. The plumbers are "forbidden" from installing other things for the customer.

I find that understandable and okay - as well as the fact that there are no prices and rarely names in the exhibitions.

Extremely expensive objects are placed there and then pseudo-smart people come, get advice, and then order everything online.

Even as an academic, I was able to drill the sinks and toilets to the wall and they still hold up ;-)
The bathtub is also level and the showers as well as all fittings work...
In other words, we did the final installation ourselves, which was not a big problem.

No one would say anything if you paid about 20% more than on the internet, but many demand about double the internet price, and I just don’t see why you should pay €5000 more for 30-60 minutes of looking and a brief consultation.

But that is not due to the exhibitions, but to the respective company.

And looking for 30-60 minutes is not a consultation - with corresponding quality, you are busy for several hours.

My plumber's prices were partly below [Reuter] - I didn't even think about negotiations for a second.

In that case I wouldn’t have complained either, but our plumber stubbornly entered the RRP prices, plus delivery, etc.
We already knew roughly what we wanted, and in some cases he couldn’t even show it to us live.
Whether we spend one or three hours there doesn’t change much either, if we still can’t see the things in part, we certainly won’t pay 5,000 € more when we are going to install the things ourselves anyway.
I’d say 1,000 - 1,500 € would have still been worth it for us for him to order everything and so that we might not forget a drain pipe here or that something doesn’t fit there, in other words for him to put everything together. But definitely not more.
