Soundproofing is not that easy, especially when it involves wooden beams and not concrete. It depends on the current condition and how much time and money one is willing to invest. Basically, you're right, mass matters. A construction should have a hard material, a soft heavy material, and then a hard material again. I personally know, for example, that soundproofing with the material from the mats that you can place under the washing machine can help a lot. But of course, the question is whether the weight can even be added to the ceiling and whether it makes sense here. That is a question I cannot answer. Then it also depends on how the walls finish at the floor or the ceiling; that can also become a not-to-be-underestimated sound bridge. In another forum that primarily deals with [Fachwerk] (just google it), there are some members who have experience and knowledge, probably a bit more than here. One could read up or inquire there, alternatively it might also be sensible to consult an expert. Simply placing mineral wool or wood fiber between the beams, then OSB on top, and finally the floor would certainly not be ideal. As I already wrote, one should not take the whole thing too lightly and should put some thought into it beforehand, then something usable will come out of it.
