That is no problem at all, as long as the sanitary ROUGH installation remains in the hands of your provider; installing the sanitary fixtures later is not rocket science. The interesting question is, do you then also have to remove the tiles (this usually includes the interior window sills) and therefore also the interior doors from the contract? Most providers do not like to build upon a trade that has been fulfilled by EL.
It "can" become problematic if you want a floor-level or flush shower. In that case, you should definitely be able to rely on help that knows their craft.
