This is (more or less) normal with the measures you mentioned. A core renovation means dirt everywhere. I see the problem more in you storing furniture in the "shell construction" or assuming that everything goes without dirt.
Now to the mess made by the workers. No, such a way of working is not normal.
It sounds to me like a consumer construction contract in your case. Then you certainly have a retention of security – you should use that.
Apart from that, you are assuming things that are not usual if not agreed upon (no portable toilet contractually agreed = the workers have to go somewhere, no insulation in the niche = was insulation agreed and paid for?).
Anyway, the craftsmen are definitely responsible for damages.
Yes, I will deduct payment at the end if defects are not repaired.

With a proper company, this shouldn’t happen; they have their own tools.
They usually cover the work areas, etc.
And the toilet issue is also clarified in advance.

I don’t know if they are migrant workers. The tip came from the new neighborhood (and such tips are worth gold! Getting a craftsman at all is a real ordeal). A house across the street was completely renovated and I was allowed to observe the work; I saw a thing or two here and there, but overall it looked neat, and their renovation was at a considerably higher cost level than mine. Of course, I did not see them working, just the result.
Did everything go on invoice??? Just asking :) otherwise I can’t imagine anyone sh**ting in your garden except a dog. Or did you lock the toilet?

Of course, all services were commissioned with proper invoices and VAT and are billed accordingly. No undeclared work. My self-employment could be jeopardized by that; I’m not stupid. Also, having lines & co done without invoice (and warranty), well...

Here it’s about wheelbarrow, shovel and ladder... if it’s standing around, it will be used. Even by proper companies. Completely normal from my point of view. They are supposed to clean it up and that’s that.
Why should I be a builder? I deliberately chose against a vacant plot (ok, none are available anyway) and for an (old) existing building. And if I then have 60-year-old door frames that were originally really fine carpentry work and have lasted the 60 years, I’m pretty pissed if no one pays a little attention. I see myself as a client of a craft service.
But I see, very different views. I still believe wherever you work you must ensure not to leave more damage behind than before. Well, I’m curious how it will be settled in the end.
Slowly some appearance is coming in and you can get an idea of how it will look someday, slowly joy sets in.....
