Construction project new build - budget exceeded - experiences?!

It happened to us as well: the architect massively miscalculated. Possibly it also has to do with the fact that the construction trade is using the good order situation to adjust prices. Economically, that makes sense. Now we have increased the budget and it's starting.

310K€ for 165sqm in Bavaria?

When was the last time the architect accompanied a construction project???

I consider the offers to be realistic in comparison.

Completely unrealistic cost estimate that disregards the current market. We simply do not have market equilibrium at the moment; especially such "goodies" like Baukindergeld directly affect the pricing behavior of construction companies.
Three years ago here in Bavaria, we paid about €40,000 more for a somewhat smaller house. Including basement and double prefabricated garage, excluding incidental construction costs.

I would never let friends or family do the planning for me. It almost always leads to arguments. I've experienced it myself.
