Glad if our house has provided some inspiration. Always remember that exterior landscaping, fittings, etc. still need to be added. But with the mentioned budget, it will be feasible (with some restrictions). The prefab house provider requires as much input as an architect. If you want “your” house, it also means a corresponding effort. Even with individual trades, fixed prices can be discussed. At what level would your house entrance be? If not on your living level, I would also consider an elevator.

We have quite a lot of equity and could probably manage a sum of 1-1.5 million. Whether we want to max out the financial frame is another question.

So honestly, with that budget I wouldn’t bring a stranger into the house just to get €30,000 in subsidies. And building a granny flat that remains empty doesn’t make sense either. The granny flat only makes sense if you want to use it as a home office and/or as a guest room. On the other hand, it looks like you already have enough living space upstairs for that.
