I think positively... but if it comes to that... then a deadline will be set. If it passes, I will commission another company to complete the remaining work.

Whereas the contracts also come from the construction companies... I have never heard of a client drafting a construction contract. So maybe such a contract is rather to the advantage of the construction company???

This will not be so easy _without_ a written contract, since it would first have to be clarified whether VOB or the Building Code applies as agreed, and consequently, under what conditions you can terminate a contract that arises through tacit agreement. Contract comes from agreement - so simple, so true. A contract regulates - ideally unambiguously - which defined service is owed at what price in what time with which payment terms/securities and contractual penalties. If you forego a written contract, a possible delay in the construction period will certainly be your smallest problem. Rhineland greetings

There is an offer (in writing?) and a description of services. The offer was accepted. In my opinion, this definitely constitutes a contract. The content of the offer would be interesting ...

If it is not about entire houses, but only parts of them (new roof, new bathroom), this would probably correspond to the usual procedure: offer with description of services and price, offer is accepted, craftsman carries out the work. There is then no document labeled "Werkvertrag". Where should the problem be?

The legal regulation according to the Building Code is in most cases quite consumer-friendly.
To my knowledge, it is difficult to agree on VOB between companies and consumers, especially if it is not fully presented but only mentioned somewhere in the offer. Then only the parts of the VOB positive for the consumer apply.
If the trust in the BU is there, why not...
