The numbers alone say nothing at first; that is just the construction depth of the profile being indicated. This can be reduced by fitting the sashes more flush, that is, by reducing the "overlap" between the opening sash and the frame (this is mostly what fans of slimmer profiles are concerned about, similar to "softer" edges). If the reduced construction depth results from overall more compact dimensions of all chambers, the profile can, of course, become more expensive at the same torsional stiffness: brains cost more than material. I suspect each of the two suppliers has reasons for their decision. These sometimes lie in the price difference (for stingy customers, the lower-priced profile is chosen), but sometimes also in the risk of complaints (if the frames turn out to be "floppier" or the fittings are subjected to more strain). Nobody will go to this effort just for 12 mm more space for bigger flower pots.

Definitely include soundproofing at least level 3. Regular windows with 32db are absolutely terrible.

You see, those are really good ideas

But that’s exactly what I intended. Or rather, I even believe that you can never have enough soundproofing; in the end, the extra 1000 euros for all the windows is simply a great investment.

Gladly! At least others should not make our mistakes. We were also grateful for tips. The 1000 euros are very well invested, because the entire building envelope should be roughly at the same level in terms of sound insulation. Otherwise, it is pointless. We later had all the panes replaced for about 8000 euros because it was simply massively disturbing, and we live in a quiet residential area. Unfortunately, almost no one points out that normal windows are so bad for soundproofing.

What kind of ears or nerves do you have? When the windows are closed here, you can hardly hear anything.
