Tommes, so far we have had exactly one warm day and now it is cool again. The house will only be built in Sept. 16 (holzständerbauweise)

I am short of breath when the system is off, I will be completely home in muschu again by mid-June at the latest

Here's a theory: In winter, the "storage" is loaded with warm air from the inside to warm up the colder outside air... does it also work the other way around, meaning: the "storage" is cooled with the room air and cools down the outside air? Otherwise, we stick to basic supply during the day, then ventilate at night (level 2 or 3)... we've never had more than 22-23 degrees here... let's see how it will be this year...

What kind of storage? Just google [Kreuzstromwärmetauscher].

In summer, you use the bypass. That means at night, turn the bypass on and increase the ventilation so that the cool outside air comes into the house without heat recovery, and the warm air inside the house goes directly outside without warming the supply air.

Exactly, that's how it works. Not only as preheating but also as cooling. That's why it always makes sense to work with ventilation instead of windows.

With us there is only the airing mode, and air only goes in / out (?), in any case only in one direction...

A controlled residential ventilation system with heat recovery and bypass should run continuously. This then reduces the heating up of the house, it stays cool longer. Those who have large window fronts and do not shade them will still get a warm house in no time.
