Is there a law that mentions the Schufa? What if they go bankrupt, do laws then have to be changed? However, all the accounts I have at the Sparkasse, including their limits, are reported to the Schufa, I can see that online and I logically had to agree to this data transfer.

This is completely serious.
All banks that offer checking accounts in DE are required to have access to Schufa.
