When I had my bathroom renovated, there was no screed under the old shower tray and bathtub, and accordingly no underfloor heating either. Since the craftsman advised me against patching it up (risk of cracking and difficulties in extending the heating circuit into the shower), I had the entire screed in the bathroom redone. During this process, the heating circuit was completely relaid and now also runs in the new flush-to-floor shower. The screed installer created the slope in one go, so the screed was not segmented. An expansion joint was not necessary, and there is only one heating circuit. However, I also have an additional bathroom radiator, mainly for towels, but also in case the room should not get warm enough (e.g., during transitional periods when the underfloor heating is not really heating yet, but there's a cold morning).
