Tile choice - how/where to start?

If porcelain stoneware tiles make it to the shortlist, I recommend you try walking on them once. We decided solely based on the appearance and I was extremely surprised yesterday during the first time walking on them how uneven/bumpy they are (at least ours). I don't find it unpleasant, but I wasn't used to it before, so I didn't expect it and was initially surprised.

I don’t find it unpleasant, but I wasn’t familiar with it so I didn’t expect it and was initially surprised.

A surface texture of tiles is now easy to manufacture and often part of the design. With porcelain stoneware, you can also produce mirror-smooth and perfectly even tiles.
Good tip to touch and walk on the tiles once.

You see, I still have no idea we had obviously felt it by hand before, but I wouldn't have expected it to be significantly more extreme and different on foot. Therefore -> don't rely on just your hand

We chose the floor tiles, among other things, based on how visible our hair, dust, and dirt are on them. I do clean, but I don’t feel like always seeing a messy floor after just doing my hair.

We have the same and I’m totally happy about it! We only have one surface where you can see hair/dust/sand, which is the dark gray staircase. And that bothers me every day! Even if I vacuumed 30 minutes ago! We have gray concrete-look tiles and also warm gray wood-look tiles, both extremely resistant!!!

How can you actually recognize the quality of a tile? By its thickness? Color deviations? Other parameters?

The quality depends on the room and can be recognized in a tile as well as in a carpet by information on various parameters.
