Stairs wrongly concreted, what now? Completion to the upper floor

If that is the case, you have a real problem. There are 10 tons of screed on the insulation, and when you step on it, everything compresses by a few millimeters...

Of course, everything still settles a little, but you have no alternative. I don’t see a problem in installing a carrier plate (of whatever kind). It doesn’t have to be pressed in (between the overhanging tile and the step).

A thin shadow gap is advisable anyway, because the planned concrete effect plaster will also crack on the other wooden steps, if I have understood the desired construction correctly.

Maybe I expressed myself incorrectly, it probably doesn't compress but rather springs back, and so strongly that I can clearly see on the left by the wall that the screed goes down. I'll measure it this evening. It's also just a 1mx6m long hallway.

I'll say – as a non-lawyer but with some experience in construction forums – that based on your story and pictures, a complaint about defects after completion does not seem appropriate or even justified, and I advise you to take the payment demands seriously. My impression is that they tried to integrate an architectural house highlight into a general contractor’s standardized house and at least took the detailed planning lightly.

Unfortunately, you haven’t shown the building plan here yet, so I can’t verify it. The detail of the exit step is already a classic example of miscommunication. There is no "right" here, only "your 'wrong'" or "my 'wrong'." Unfortunately, it won’t look nice either way, certainly not tiled, because the only suitable finish here would have been to choose a covering with the appropriate wood surface and execute the exit visually in the thickness of the step coverings.

Until proven otherwise, I suspect all errors lie with the client here.

To judge that precisely, you should post a dimensioned sketch of the section of the last steps.

I see it the same way as . The last stair step should be wood.

Why is the penultimate step actually too short and this quirky (ugly) offset in the wall?

Here, the screed and insulation should be cut off by at least 20 cm, then concreted up, and a wooden step installed.
