I have also done the whole thing in some rooms.
Construction from bottom to top as follows:
old:
Plaster, reed mats, nailed boards, filling, air space, floorboards
new:
Suspended ceiling, old plaster, reed, nailed boards, Rockwool insulation, new subfloor, layer of quartz sand and then dry fill (mess), OSB 24mm, dry screed 20mm, tiles or parquet
Sound insulation is very good. Not perfect, but you basically don’t hear anything from the bathroom.
Why new subfloor: I wanted to add weight between the joists, which probably wouldn’t have held before, as the boards were only nailed from below. Probably just for the feeling, but it was a nice project.
If I had higher ceilings, I would have suspended the ceiling differently. As it is, there is probably no significant positive sound effect.
