I think this is the absolutely wrong approach... this way you partly make yourself dependent on a technology that is still in its infancy.

What speaks against simply laying coax cables star-shaped into all rooms (e.g., from the HAR) and then using them as needed?

The advantage is that the cable practically costs nothing (about half as cheap as CAT) and additionally the network outlets in the rooms remain free or are used by network devices and sometimes occupy the only free port.

To my knowledge, coaxial cable is also used for regular cable TV in the house, so there will also be sufficient outlets with coax connections available here.

Well, as I already said... first clarify what the electrician actually has included in the standard package... we can discuss everything else here afterwards.

Coax cable is the same. The connection of the sockets is not the same. With cable, it is daisy-chained; with satellite, spur lines are laid. The sockets themselves are usually different for cable (47-862MHz) and satellite (950-2400MHz). However, there are also pass-through sockets that can handle the entire signal spectrum and can be used as both with a terminating resistor.
