Lime-gypsum plaster crumbly and therefore defective?

I would be interested to know what these yellowish-brown particles on the plaster are?
The plaster hasn't been smoothed here yet, has it?

We want our lime-gypsum plaster to be relatively smooth and not wallpapered at first. How will you treat your plaster further?

Thank you all for the feedback! How sensitive he really is will probably only become apparent over time, when the next craftsmen work through or when things are set up and something occasionally bangs against the wall.

I think that is sand?! These (yellow) particles are strangely only on this one wall. They will be brushed off before painting though, as they are quite coarse and clumped at this spot compared to the rest. The plaster is floated, grain size up to 1 mm. You can already see white grains evenly distributed over the entire surface (but nowhere near like in the picture detail). The plaster itself is pretty even (despite Q2) and will only be painted. If you don't want the grains, I think you have to fill it again to make it absolutely smooth. But others surely know better.
