hehe yup. Gas stoves are always worth discussing
We've been cooking on gas for the last 3 years and don't want to miss it anymore. The issue with "simmering" doesn't arise with good equipment. You either need a cast iron plate that you place on the flame (by the way, you can grill brilliantly on it ) or a large enameled cast iron pot. I have some that are now certainly 80 or more years old Nothing burns on the lowest setting, and I really make a lot of braised dishes
In France, there are still so-called glowing plates. Only when it comes to raising children do you have to give the gas stove an extra round. But that worked in the past, and still works now if you put in the effort.
