Thank you for the responses so far.

Update: we followed up again with two who were generally sympathetic to us.

There are now two contradictory statements regarding the construction period, which I cannot assess; what do you think:

One offers: construction time guarantee of 8 months from the start of construction, thereafter a penalty of 50 euros per day. He is confident and says this would be absolutely unproblematic.

The other says: he basically cannot guarantee anything, but as a guideline we should assume 13-15 months. Contractually, if necessary, he guarantees 15 months from the start of construction. You cannot classically build solidly with Poroton and concrete ceilings any faster without later having moisture problems due to shorter drying times.

What do the experts say? Is the second statement true or is it an excuse so that he remains flexible for other intermediate work on other construction sites simultaneously, etc.?

Eight months versus thirteen to fifteen months will be comparing apples and oranges: A probably means the weather-tight shell, while B means the ready-to-furnish house. My gut says clearly, take B.

You don’t suffer the slightest damage if the contractor assigns his people elsewhere during drying phases at your site. He also seems experienced to me and reasonably factors in that he will be affected by scheduling changes of other parties on your construction progress.

With that statement, he would fail with me. Concrete does not dry, it hardens. And Poroton is usually glued nowadays. Usually, hardly any water is introduced into the building structure. It only really gets wet with screed and plaster. I can confirm A's statement. 8 months between excavation and moving in are quite realistic, personally experienced. Weather-tight shell was done after ~8 weeks. During the summer holidays, ~6 weeks of rest allowed the screed to dry.

I see it similarly, although for the eight months a good to very good logistics is necessary to ensure everything runs "like clockwork." Our house (Poroton + concrete ceilings) could also have been finished in eight months, but in the end it took a good eleven and thus about two weeks past the guaranteed date.

Hello cyberfabi, which company did you ultimately decide on? We are currently also looking for a suitable construction company in the Pforzheim / Enzkreis region. I would have liked to write to you personally, but so far I have written too few forum posts.
