We planned our kitchen almost identically, but our stove is free-standing (where you have the counter). On the wall to the pantry, we have cabinets nearly up to the ceiling (large refrigerator, built-in oven + microwave, jalousie cabinet in the corner, etc.). Therefore, we completely avoid tall cabinets. Why shouldn't the sink be under the window? In a niche that also has windows on two sides, you don't have many options. I would completely avoid wall cabinets (in my opinion, they really look bad).

No, we want the sink under a window. As I said: we don’t want the stove to be free. Why no wall cabinets? Now purely because of our kitchen layout or in general? We just need a lot of space for storage.

Wall cabinets... depends on the style of the kitchen, modern kitchens can do without them, maybe just one or two shelves above the work surface. In country house style, after all, the (also modern) country house style is characterized by, for example, panels at the top, in which accent lights are installed. Your kitchen is not exactly easy to furnish. The room is somehow interrupted by two windows. Tall cabinets or taller ones come into effect when you look at them. If you plan them on the side of the pantry, you only have the tall side as a focal point, and you also run against it when you want to enter the kitchen. You probably forgot to include a kitchen planner in the floor plan?! Ikea has a kitchen planner, try it out... cabinets are generally the same... also to visualize in 3D. Otherwise, the only option is to go to a skilled kitchen studio (or several), some are good, others are bad. Or you might reconsider the pantry, which in my opinion is too large... you can fit the contents of two kitchens in there.

As just mentioned, two walls are interrupted by the windows. Imagine how it would look with wall cabinets - feels like shooting slits! You do have a pantry, so why do you need to store so much in the kitchen? You could also do without the pantry and build a really nice large kitchen - I personally find that nicer than having another "junk room"...
