It is just like the discussion about whether a tube amplifier or a transistor amplifier produces the "better" sound. The fact is that nowadays a good transistor amplifier is extremely close to "100%", meaning it amplifies exactly without distortion, etc.; however, there are groups of people who perceive the distortion of tube amplifiers as precisely the better sound experience.
Nevertheless, the difference in digital cables cannot be heard with absolute certainty, and at most the contacts or plugs can make a difference - because copper is the better conductor. If someone switches from a poor "cheap" cable to high-end, the difference can definitely be heard. But the effect certainly does not come from the gold in the cable, but simply from the clean and good workmanship, e.g., of the plugs (as with Seb.. not crimped, but soldered internally...).
