Then the bathtub is still in the other bathroom. I might use the smaller bathroom in the morning, but the children should hear or notice as little as possible from the large "family bathroom." It’s also kind of annoying. Both should still remain accessible via the hallway.

What activities exactly? Make sure the poor kids don’t wake up before 6 a.m. from all the doors opening and closing. Otherwise, I don’t see why you’d plan the main bathroom between the kids’ rooms if you’re worried about the noise from activities and afraid of the consequences for the kids.
You also have to be realistic that in a "kid-filled" family you can’t really enjoy a long bath, at least not undisturbed ;)

I hope you had a good start into the new year?

I just don’t want the children standing in bed when someone is blow-drying their hair or showering in the bathroom...

But that will probably happen if you use the bathroom in the middle of the children's room in the morning. At least in your plan, your fear is justified! From your point of view, you shouldn't place the bathroom between the rooms.

Personally, I always wonder what parents think about how their children or other family members might react to ambient noises.
In my opinion, no one has a problem with noises when people treat each other considerately – not even toilet flushes or other water sounds.

I am quite aware that noises can never be avoided 100%. I just wonder whether it might be better to use 17.5 cm bricks instead of 11.5 cm ones to significantly reduce the noise level coming from the bathroom? Unfortunately, I have no experience regarding to what extent modern bricks dampen sound.
