yes, they are fixed, you cannot remove them. The only "movable" parts are the upper tiled cover and the sieve in the middle.

I have rather negative experience with the drain in the middle! It's constantly clogged, a shower channel will be installed in the house, I'm curious if that will be better.

Then take another look at the picture from Curly: even with a single rail, there is only a small drain.

I'll check that out at our place to see if the holders are supposed to be fixed.

yes, I already know that. It is clear that in the end, whether [Rinne] or [Punktablauf], the water flows into a single pipe. Thus, it only has to do with the diameter and the slope of the drainpipe.

Central drains are a matter of taste; I don’t like stepping on them in the shower. I’m now a big fan of shower trays again because the grout dirt problem simply disappears. If you prefer steel enamel, unfortunately, the selection is very limited. Take a look at the new Kaldewei Nexsys, a stylish piece. Otherwise, mineral cast shower trays are also very nice, e.g., Duravit P3 Comforts or Stonetto.

Underfloor heating under the shower makes little sense with today’s flow temperatures. You should basically never really feel that the floor is warm; otherwise, the setting is too high.

I disagree. Underfloor heating in the shower area is not because of a "warmer" floor for the feet, but firstly to have a sufficiently heated surface in the bathroom and because the slight warmth from below does help to dry the wet shower floor. In bathrooms like mine, with about 4.5 sqm and around 1.3 sqm of shower area, this is very noticeable.
