I don't know if you really need such an expensive disability insurance. I also only pay 60 € (net) for a disability insurance that hopefully never comes into effect.
I don't find 30 euros terribly expensive now. And hey, what I can insure, I gladly want to insure! Of course, you can never insure against breakups and affairs, but even then not if you don't contribute 50,000 additional security through the parental home!
Aside from all the hypothetical extreme scenarios:
Do you have siblings who might also want to build someday? If your parents really act as guarantors, then depending on the guarantee amount, this would potentially be an exclusive right for you. You wouldn't want any bad blood to arise eventually.
You have already read many opinions here about guarantees. Your parents are taking on a financial obligation to support you financially in case of emergency; primarily this means continuing to pay the installments and not immediately forced sale or similar. But it is a risk that can severely strain a family. For us, it was not worth bringing such a risk into the family for the sake of saving a few thousand euros in interest.
If your parents really want to support you, then why don't you all go somewhere together, where you can be advised and also have the negative sides or obligations of the guarantors neutrally explained. The Interhyp advisor doesn't care at first what happens to the family; he wants to sell a loan.
I do have a sister, but her building plans are finished. It is also arranged that I am supposed to inherit the parental home at some point and she the shares in the business. And until that happens, we want (of course if everything goes normally) to have long since paid off the land charge.
I think guarantee and land charge are two different things, but I understand that it feels like the same thing.
The notary would be obligated to explain everything to us in detail anyway. And naturally, no one will sign anything before that!

My wife and I have a pretty similar net income in the end.
If my wife or I stayed at home now, we would have only 115€ less than currently.
With civil servants, there is also the fact that the salary is quite predictable.
Normal salary increases are fixed for the next 2 years. You get step increases whether you want them or not; there’s no way around it. And the promotion to A 8, 9, 10 etc. will come sooner or later. These increases are not huge, but small amounts add up.
For us, it amounts to 530€ net from April 2018 to April 2020.

We also receive allowances for children, just like for marriage. And even during parental leave, we continue to be promoted.
