I also had this idea in mind earlier and pursued it until the end, simply because I liked the shape and was intrigued by the idea of a DIY project...

In the end, I dismissed it again because I probably wouldn't be satisfied with the result and the matter could drag on forever. Just looking at the middle image from your example screenshot, you can see how modest the edges look! Like it was intended but not really done well....

I could still imagine some playful walkway in the back garden area or something like that, but for the main paths or even the terrace? No.

As far as "sealed surfaces" are concerned, it doesn't matter at that point whether they are created with this or normal paving. Both count as sealed surfaces.

No, not with us. Paved areas are not considered sealed because water can infiltrate. This affects the amount of water charges with us. Permeable surfaces do not cost, whereas concrete and thus non-permeable surfaces do.

OK, this is obviously interpreted differently by various municipalities. For us, all are considered sealed surfaces and I am not aware of any other interpretation in the area.

I saw something similar recently on Fixer Upper. There, about 20x200 stencils were pressed into concrete, which then left a pattern like wooden planks and looked nice. After that, it was also colored, etc.

This version mentioned here has probably existed for 20 years and looks, to put it mildly, shxxxxxx.

One should also consider that such material cannot be recycled. Proper stones can always be taken out again, relaid, or used elsewhere. Concrete can only be chiseled out and then disposed of.
