The ancillary building costs seem very very low to me... So far, no price under 50k ancillary building costs has been mentioned to us. It tended rather towards 70k

Frightening. I don’t see any savings for a replacement vehicle. I see horrendous expenses on clothing, vacation, and co. Well, at least honest. Complete underinsurance, no household contents insurance, no proper liability insurance... both risk and disability insurance should be taken out. Eating out is completely uneconomical... can you take care of yourselves? Your life is one big hobby. If I were you, I would do a current/target analysis and consider whether you really want and can afford this. By the way, the calculation of the house construction is not correct. With 175,000 for the plot, you can no longer rely on cheap building -> Brandenburg.

Slowly, I don’t understand the world anymore. The missing savings rate for a new car is being criticized. Yet the two of them at 26! have saved up equity of 100,000€ and continue to save about 2,000€ every month. Besides the "horrendous" costs for a self-chosen lifestyle.

So, I am by far not the expert for financing and construction costs here. But the individual items seem too low. I think you should expect 50,000€ more. Because you are young, you can also keep the overall installment low. If there is a lot of money left over, then make special repayments.

On the topic of insurance: If you want children someday, a disability insurance is really sensible. But please tailored. If no children are planned, it can be irrelevant. Then someone becomes disabled, the house is sold, and that’s that.
Life insurance as a risk cover is definitely necessary for mutual protection.
Building insurance is mandatory with financing. And it is also expensive.

As far as everything is okay. My question:

Is that really possible?
I come to 1.24% interest on 500k/400k over 20 years = €1,240/month.
It's not the end of the world now, but still.
