Nonsense, just go to your local bank or a regional bank and present your request. It costs no money at all and after an hour of consultation you will know very exactly what the bank can do, or not. And they will tell you quite directly what might be a problem. That is of course a prerequisite in order to make optimal use of the appointment. If you only want this question answered: Yes, that can work. Of course, your husband must have the necessary income to be able to service the loan alone.

I see no connection there and therefore no problem. Let your husband take out a loan for you, build an approved extension at Grandma's, and then you move in. You will inherit anyway, Grandma should no longer have to pay for something she doesn't benefit from, and your husband invests his money in the land that belongs to your Grandma and that you will inherit :)

you still haven’t written whether it is 1 plot with 3 houses or 3 plots with 1 house each, and who is currently registered as the owner. If your husband wants to build, he will not get money from the bank without being the owner. Even with a land charge on a plot that belongs to grandma or someone else, no bank will agree to that.

But you can also have Grandma appear as the builder. That was, as it read, originally intended. But the old lady no longer gets a loan. In the end, the new extension becomes her retirement home, and the young people move into the main house rent-free.

That is not true. The bank does not care who owns the property. Grandma just has to sign the land charge purpose declaration. Daily business.
