Telecommunication New Construction Semi-Detached House - What/When/How

Well, I would like to be able to choose between several cable providers so that I can easily switch if one annoys me.

Mine has only annoyed me with telephony so far, so now it mainly handles the internet connection, and four others handle the telephony.

Then you have to move to the USA. Strictly speaking, the guy with the fiber optic connection also has no choice of provider, at least as long as no one uses the possibility of Open Access. The alternative is always only wireless (LTE, 5G), but that's just how it is.
