Why two tables? I wouldn't plan two tables at all if I want it to be open, but one that is then used intensively. Preferably standard about 2x1m with extension options via pull-outs at the ends, etc. for more guests.

Yes, in my opinion it is. When there are two tables, in everyday life (so every day except birthday / baptism / Christmas / Easter) one is used for eating and the other as a storage surface, the latter of which doesn’t necessarily look nice, but rather messy. Better a well usable, adaptable (extendable) table.

One more little thought: "big" does not necessarily mean "inviting," "functional," "harmonious," or "beautiful," as one would wish the heart of the house to be.

Fundamental floor plan changes in renovation projects are anything but trivial; perhaps it would really be a wise idea to go to an architect with your requirements, your wishes, your ideas but without your drawn plan.
