I think you should first familiarize yourself with this subject and get accurate information about how, what exactly, and why.
But if you want something "solid," you probably won't get around a solid house. Wood – in any form of construction – is always more sound-permeable than solid.

At first, I would look at the houses of Talishaus together with my father-in-law, then Naturbau Meldorf, and, for comparison, the Viebrockhaus show houses.
Unfortunately, I have not found any general contractors for solid wood houses who would also build in Schleswig-Holstein. Most are actually located in Bavaria and would only build in the north at considerable extra cost.
