I wouldn't worry too much about the 2 cm less. Bosch, for example, specifies a minimum distance of 43 cm for similar extractor hoods. And flambéing shouldn't be done under the flat canopy hood anyway. For fire safety, it's also important to clean the grease filters regularly. The small distance to the ceiling is not critical, as long as the extractor hood works adequately.

But mustn't there be enough space above the cabinet for circulation?

The air just needs to be able to escape. If the gap is that small, back pressure can build up, especially with a large volume flow. Vortices also form, which can reduce performance and increase noise. My range hood came with an outlet grille that deflects the air slightly forward. The most important thing is initially whether you are satisfied with the performance of the range hood.

Were just in the store and complained about it. The employee said that she should have pointed that out to us. That the upper gap is indeed too small and there is a risk of mold! We will be informed on Wednesday about what will be done. I'm curious... if!

Sure, of course not. ;) But who knows what can happen or be overlooked in the heat of cooking.
