In the other rooms 1m, but more in the bathroom (so even if the shower/bathtub were not next to the slope) - I estimate about 1.30 or 1.40 m.

Paint different height knee walls on the wall and try it out. By the way, a bathtub is placed on the raw subfloor and not on the screed! I basically see no problem at all if the front edge of the bathtub is at 2.00 meters, however the height meter refers (and that is advantageous) to the screed height.

If the knee wall is 1.30m there, you can put the tub right up against the wall. You don't stand in it anyway. And you have to bend down to get in anyway. If you leave a 10cm ledge at the back, even more so. It also depends on how tall you are, but certainly not 2m. That means on the entry side you need at most your body height. I think you can put it wherever you like. Could you maybe just decide that during the shell construction?
