The picture is of a large living space, which appears spacious due to area and height, you don't have the area on the upper floor, so you have smaller rooms with high ceilings, which looks quite different. The individual rooms have room ceilings to prevent hearing what happens in the adjacent room, or very high partition walls.

In children's rooms, the ceiling height is wonderfully usable for a sleeping level from a certain age. In bathrooms, high ceilings in a small area can become an acoustic disaster. In the study, a very high shelving wall with a ladder can create space and flair. In the bedroom: high ceiling and [Cabrio-Dach] (not cheap).

I would at least finish the hallway and bathroom with a ceiling; Children's Room 1 then gets the bathroom as a gallery and Children's Room 2 the hallway.

And/or you could also put a ceiling over the office and create a play area for the kids on top. Advantage: on the opposite side, you could still provide small lookout windows. But these are all very small rooms. I'm not sure how it will turn out in the end.
