I cannot assess your construction. With wood, you can achieve these surfaces well; in our oddly shaped Berlin apartment, we had a worktop solution made of ash laminated wood from a carpenter. With that, you could make any depth. However, I remember that apparently no large parts are brought into the room by force. From a practical point of view, this kitchen would not suit my cooking habits. Reasons for this:
1. Next to the hob, there would be too little work surface for me; I couldn't place pots, pans, or prepared bowls with ingredients or put down cooking utensils there.
2. The distance from the oven - if it should go into the recess in the left kitchen cabinet - to a free work surface or to the sink would be too far for me. Taking something out briefly and putting it back in means longer distances.
3. I like light and space on the work surface. I fear the wall cabinets in the room would be detrimental to this.
4. We realized the solution with trolleys for better cleaning with a mop in our second apartment. It did not prove effective because we had too little space to move the trolleys far enough away to clean well. Trolley out, clean partial surface, trolley in, clean next partial surface... Your kitchen also seems too narrow for this.
