okay, so chasing and laying electrical wiring is no problem. Afterwards, fill the chases with plaster. I would still apply a fine plaster afterwards. I assume you want smooth walls?

Then please don't forget that drywall panels also require quite a bit of work if you want them to be really good. I don't really believe that it is easier and faster than applying plaster over the masonry walls. A drywall that is supposed to be really smooth is, as far as I know, filled 4 times + sanding work... That is quite an effort not to be underestimated.

Exactly: smooth walls! That is my goal.

I can handle drywall quite well and have some experience with it. It would be glued to the wall, the joints filled - that's it. Then a textured wallpaper would be applied over it, which will then be painted once. I can estimate this effort quite well. As for plastering walls, I'm not really confident... ;-) and it should look good anyway.

By the way, the ceilings are clad with profiled wood - deep 80s. Although I'm a real wood fan, the wood on the ceiling also has to be removed. The ceiling will also be clad with drywall.

And then the floors - there's quite a bit to do. The 50s bathroom will also be redone. A man has to have something to do.
