In the kitchen, there are practical distances of 1-1.2m between kitchen units, for example if you open a door you can still stand in front of it and clear or take a baking tray out of the oven and place it on the opposite side.

Yes, it offers much more useful space both on the kitchen unit and in the 3 tall cabinets, but the available space on the floor in the second suggestion is there for what?

With my planning, you have more storage space, more surface area, the island at 360cm room length could be max 2m plus cover side/panel long, if the tall units are on the hallway wall. Personally, the passage would then be a bit too tight for me.

370cm room length would be ideal.

With a 2m island, wouldn't both the cooktop and the sink fit on it?

Physically yes. Ergonomically, you shouldn't really consider it with less than 3m width.
