How does my heating system with solar thermal work?

Hi,
I'm also chiming in here with my half-knowledge.
The tube below the pump is probably a Tacosetter (flow meter/regulator). Have you checked if it is set correctly or even turned off?

Maybe a stupid question, but is the Tacosetter possibly installed the wrong way around? Does it have an arrow direction?

It is the right way around. You can see the scaling (4, 5, 6) of the float; it rises to the corresponding value at the appropriate flow rate. The valve directly above is also open.

I checked again (see pictures in the attachment, unfortunately they didn’t turn out very well...), the arrow points upwards, that should be correct for the return flow, right?

Somehow there is something wrong with my heating system overall and/or I don’t understand the operation or not fully...
We do not live here yet (we are still in the middle of the renovation phase), but to ensure frost protection we installed some of the old radiators on the ground floor last autumn.
Unfortunately, our heating unit has no setting option for heating operation without heating the domestic hot water. Therefore, I lowered the target temperature for the hot water to 16°C (this was recommended to me by the Viessmann service line to save gas accordingly), but nevertheless the domestic hot water temperature is maintained at >50°C...
I thought it might be due to an anti-legionella function, but this is not activated.
The Viessmann service only says: “Without knowing the hydraulics and the setup of the system on site, we unfortunately cannot make a statement about this.” OK, I understand that! But the heat certainly does not come from the solar thermal system in January and February, so why is the hot water kept so high when 16°C is set?

And then last week the stratified storage tank on top was wet... Apparently water leaked or was drained from the manometer mounted on top of the tank, but why...?!

I know, without an expert I probably won’t be able to find out anything...

Thanks for your help!

The system is now running perfectly! A heating engineer flushed, filled, and bled the air. Now heat also reaches the bottom, the supply line at the pump station was already about ~80°C around noon today! The heating engineer also makes a good impression, no comparison to the original builder (whom I only know by phone...)

One more quick question about the functionality: The heating engineer explained to me that the control stops activating the pump once a certain temperature is reached on the roof (he said it should be around 126°C). OK, I understand that the water in the layered storage tank should not boil, but why is the temperature value of the water in the storage tank not used as the limit value? For example, today at noon the pump didn’t run because there were 140°C on the roof, even though the water in the storage tank was "only" about 53°C...
