Is there a program where you can plan something like this nicely?

Tendentially, I would have planned an access point in the hallway on the ground floor and in the gallery upstairs.

Too few in your opinion?

First consider how much bandwidth you really need. In the end, you'll probably find out that a standard solution is more than enough. Not every private household necessarily has to install fiber optic all the way to the device outlets...

Download the free controller software from Unifi. Upload your floor plans to [Karten] and trace the walls using the corresponding materials. After that, you can position APs and see the coverage for 5GHz and 2.4GHz on the heatmap. This already gives you a very good reference point. In your basement, place one in the living/dining area since you need or will use the 5GHz speed here. It doesn't matter if there is only 2.4GHz coverage in the bathroom. It's enough for writing or reading messages ;) Upstairs, one will probably be sufficient as well, as long as the TV and so on are wired.

Thanks for the thread. Then I can save myself the socket at the access point! Do I need a special LAN socket for POE? Should it be a double socket?

For the Unifis, it is best not to have any box at all, just the bare cable - they have a direct introduction so that in the end only the device is visible.
