I once had such a board in the old house and first stained it dark and then sealed it with boat varnish. Glossy, of course. I didn't have to do anything else to the board - it looked very elegant with a chrome built-in sink.
You can also oil. For this, I would recommend a good parquet oil. However, it comes with slightly more maintenance effort. If you get into the habit of wiping off moisture promptly, it will hold up well.
