It always depends on many things, as mentioned above the mortar, whether you already live there and first have to tape everything dust-tight for hours etc. And of course the craftsmanship...

Comes down to it, but I would say more like 2-3 days rather than 7-8. About three years ago, I removed around 40m² of tiles in half a day. There were three of us and we had a nice Hilti. Most of it came off pretty easily, but in the guest WC there were some super thick tiles laid in thick-bed mortar, which was quite a hassle. A manageable bathroom with 2 layers of tiles up to the ceiling was also done in half a day.
