I have already read your builder’s argumentation, but I simply doubt it.
A drywall with a stud frame is at least 15 cm thick. Cutting a hole somewhere, boxing it out, and filling it in again for a 10-12 cm deep niche can’t be a problem, can it? Or how thick is your wall? Or is there only one wall and it leads to the neighboring room? Then I would understand it.
Have you uploaded your floor plan somewhere?

Just as Tolentino writes: If you take the wall where your shower rod is hanging: the water hoses are probably behind a drywall and not embedded directly in grooves in the masonry? Then the drywall is usually extended all the way up—and where the shower rod and the hose connections are not in the way, you can have the drywall builder install a box, which the tiler will then cover.

There are also prefabricated niches in stainless steel or already tiled, or ones to tile yourself. They are just more expensive. I also agree with Tolentino that there is really nothing against these niches and the walls don’t need to be made thicker, unless you have worryingly thin drywall walls. We will have niches in the shower and above the bathtub. Additionally, some as storage space by a bed (which is against the wall) and above the sofa. I’m looking forward to it.

Just take the riser pipe inside and then you have the whole wall free in front of you. Depending on the shower, a narrow glass panel could be glued continuously there, for example. Likewise, there are all kinds of chrome shelves from Keuco, Giese, and many others. It also depends on whether you want the classic, i.e. one shampoo for "everything", or tubes here and bottles there... I would then choose the shelf accordingly, although the solution with the niche definitely works just as well, why not?
